Directions

Preheat the oven to 400°F (200°C).
Shuck the corn and carefully cut each ear into "ribs" by slicing vertically between the rows of kernels.

In a bowl, toss the corn ribs with olive oil, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper. Ensure the corn ribs are evenly coated with the seasonings.

Place the seasoned corn ribs on a baking sheet lined with parchment paper, making sure they are in a single layer.

Roast the corn ribs in the preheated oven for 20-25 minutes or until they are golden brown and slightly crispy, turning them halfway through for even cooking.

Remove the corn ribs from the oven and transfer them to a serving plate.
Sprinkle with chopped fresh parsley or cilantro for a burst of freshness.
Add as much cheese as you want! I love queso fresco for this recipe!
Serve the corn ribs hot with lime wedges on the side for squeezing over the top.
